Ingredients

For the Meatloaf

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning

  • 4 medium potatoes, thinly sliced
  • 3 large carrots, cut into chunks
  • 1 small onion, sliced

For the Gravy

  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp butter, melted
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

Step 1: Prepare the Meatloaf

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, Worcestershire sauce, salt, pepper, and Italian seasoning.
  3. Mix until just combined.
  4. Divide the mixture into 4 equal portions and shape into oval mini loaves.

Step 2: Prepare the Vegetables

  1. Divide the sliced potatoes, carrots, and onions among 4 small foil baking pans.
  2. Season lightly with salt and pepper.

Step 3: Make the Gravy

  1. In a small bowl, whisk together beef broth, Worcestershire sauce, melted butter, garlic powder, salt, and pepper.
  2. Pour the mixture evenly over the vegetables.

Step 4: Assemble and Bake

  1. Place one mini meatloaf on top of the vegetables in each pan.
  2. Cover loosely with foil.
  3. Bake for 35 minutes.
  4. Remove the foil and continue baking for 15–20 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C) and the vegetables are tender.

Step 5: Serve

Let rest for 5 minutes before serving. Spoon some of the pan juices over the meatloaf and vegetables for extra flavor.
