Instructions
Step 1: Prepare the Meatloaf
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, Worcestershire sauce, salt, pepper, and Italian seasoning.
- Mix until just combined.
- Divide the mixture into 4 equal portions and shape into oval mini loaves.
Step 2: Prepare the Vegetables
- Divide the sliced potatoes, carrots, and onions among 4 small foil baking pans.
- Season lightly with salt and pepper.
Step 3: Make the Gravy
- In a small bowl, whisk together beef broth, Worcestershire sauce, melted butter, garlic powder, salt, and pepper.
- Pour the mixture evenly over the vegetables.
Step 4: Assemble and Bake
- Place one mini meatloaf on top of the vegetables in each pan.
- Cover loosely with foil.
- Bake for 35 minutes.
- Remove the foil and continue baking for 15–20 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C) and the vegetables are tender.
